Homemade Vegan Pizza Dough
Makes: 4 medium pizzas | Total time: 1h25
Ingredients:
- 500 g flour (common wheat or bread flour)
- 12 g of sugar
- 25 g instant dry yeast
- 360 ml of warm water
- 45 ml olive oil + extra for greasing
- ¼ teaspoon garlic powder
- 1 teaspoon salt
Preparation:
1️⃣ In a small bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
2️⃣ In another bowl, combine the flour, salt, and garlic powder. Make a well in the center and pour in the yeast mixture and olive oil.
3️⃣ Knead the dough for 8 minutes until it is smooth, elastic, and slightly moist. Adjust with flour or water if necessary.
4️⃣ Place the dough in a greased bowl, cover with a cloth or plastic wrap and let it rise in a warm place for 45-60 minutes, until it doubles in volume.
5️⃣ Divide the dough into 4 parts and roll out on a floured surface into the desired shape. Now just assemble and bake!
Rustic Confit Tomato Sauce

Ingredients:
- 200 g cherry tomatoes
- 8 garlic cloves
- 3 tablespoons of extra virgin olive oil
- ½ teaspoon dried oregano
- ¼ teaspoon of salt
- Fresh basil leaves (optional)
Preparation:
1️⃣ In a small baking dish, arrange the tomatoes and garlic cloves, and drizzle with olive oil. Season with salt, oregano, and, if desired, add a few fresh basil leaves.
2️⃣ Bake in a preheated oven at 180°C for approximately 1 hour, until the tomatoes are soft and slightly caramelized.
3️⃣ After roasting, mash everything with a fork or spatula until it forms a rustic sauce. Set aside.
Pizza Assembly
Ingredients:
- Pizza dough (homemade or store-bought) - about 260g per disc
- Flour or cornmeal for dusting
- Grated vegetable cheese (of your choice), to taste
- Fresh basil leaves
- Extra oregano, to taste

Preparation:
1️⃣ Preheat your oven to a maximum temperature of 260-290°C. Heat a baking sheet or pizza stone while you bake, if possible.
2️⃣ Roll out the dough on a floured surface until it forms a disc of approximately 25 - 30 cm.
3️⃣ Spread the tomato confit sauce over the base, leaving a border free for the crust. Top with grated vegan cheese and, if desired, a drizzle of olive oil, cherry tomatoes, and oregano.
4️⃣ Bake:
→ Pizza stone or oven: 5 to 8 minutes, until edges are golden brown and cheese is bubbly.
→ Conventional oven: 10 to 12 minutes on a hot baking sheet lined with parchment paper, until golden brown.
5️⃣ Finish with fresh basil leaves after removing from the oven. Serve immediately!

🔸 Roasted sliced beets + vegan basil pesto

Chef's Tips:
✔ A very hot oven is the secret: preheat for at least 30 minutes with the baking tray inside.
✔ Freeze pre-baked pizzas: Bake the dough for 5 minutes uncovered, let it cool, add the ingredients, and freeze. To prepare, bake directly in the oven without thawing.
✔ Reuse leftovers: heat slices in a pan with a lid, it will crisp up underneath and the cheese will melt evenly.
Storage:
🔹 Raw dough can be frozen for up to 1 month.
🔹 Ready-made pizzas last up to 3 days in the refrigerator.
🔹 To reheat, use an oven or frying pan instead of a microwave.
