Roasted Corn Ribs: The Spirit of BBQ in a Plant-Based Version, Ready in 20 Minutes

These corn "ribs" emerged as a creative reinterpretation of the classic American barbecue. Here, the corn becomes the absolute star. Golden on the outside, soft on the inside, and with a layer of spices that caramelizes lightly in the heat of the air fryer. In addition to being practical, they are naturally vegan, rich in fiber and antioxidants, and are perfect as a snack, appetizer, or side dish.

Roasted Corn "Ribs"

Yields: 8 corn cobs

Ingredients:

  • 2 ears of cooked corn
  • 1/4 cup olive oil or avocado oil
  • 3 tablespoons of molasses (or maple syrup or agave)
  • 1 tablespoon of smoked paprika
  • 1 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon of black pepper

Spicy sauce:

  • 1 1/2 tablespoons of vegan mayonnaise
  • 1 teaspoon of sweet chili
  • 1 teaspoon of sriracha
  • 1/4 teaspoon of soy sauce

Finishing:

  • Chopped fresh chives 

Preparation:

1️⃣ Cut each ear of corn lengthwise into four parts, forming 8 strips. Use a very sharp knife, pressing the ear firmly against the cutting board.

2️⃣ In a bowl, combine the olive oil, molasses, paprika, garlic, salt, and pepper until a glossy and aromatic sauce forms.

3️⃣ Generously brush this mixture over all sides of the corn.

4️⃣ Lightly grease the air fryer tray, arrange the strips without overlapping, and bake at 200°C for 10 to 12 minutes, shaking the basket halfway through to brown evenly.

5️⃣ While the corn is roasting, mix all the sauce ingredients until smooth.

6️⃣ Remove the corn from the air fryer when it is golden brown and lightly caramelized. Serve immediately, brushing the sauce over it or using it as a side dish. Finish with fresh chives.

Chef and nutrition tips:

🔸Molasses helps with caramelization and creates a contrast with the salt and pepper. If you prefer, you can substitute maple syrup or agave.

🔸For a higher protein version, serve these "ribs" with grilled tofu, tempeh, or a cashew sauce.

🔸Finish with squeezed lemon and fresh cilantro for a more Latin touch.

🔸Add nutritional yeast to the sauce for a more cheesy flavor.

🔸Serve as a filling for tacos, bowls, or as a side dish for salads.
