Inspired by the most comforting American autumn breakfasts, it combines oats, baked apples, warm spices, and natural ingredients that sustain energy throughout the day without weighing you down.
Besides being delicious, it's an extremely balanced option from a nutritional standpoint. Oats provide important fiber for satiety and gut health, flaxseed helps with the intake of good fats and anti-inflammatory compounds, while apples bring natural sweetness and antioxidants. The result is a practical, nutritious recipe that's perfect for preparing in advance. Best of all, it works both for breakfast and as a healthy snack throughout the week.
Creamy Apple and Oat Bake
Yield: 8 servings
Ingredients:
Dry base:
- 2 cups of rolled oats
- 1 tablespoon of flaxseed meal
- 2 teaspoon ground cinnamon
- 1/4 teaspoon grated fresh ginger
- 1 pinch of nutmeg
- 1 teaspoon of chemical yeast
Creamy base:
- 2 cups of unsweetened almond milk
- 1/4 cup molasses (or maple syrup or agave syrup)
- 1/2 cup unsweetened applesauce (or mashed banana)
- 2 tablespoons of melted coconut oil (or vegan butter)
- 2 teaspoons of vanilla extract
Accessories:
- 1 1/2 cups of apples, diced into small cubes (approximately 2 apples)
- 2/3 cup chopped pecans
- 1/3 cup of raisins (or unsweetened shredded coconut)
Optional coverage:
- 1/4 cup coconut sugar (or brown sugar or erythritol)
Preparation:
1️⃣ Preheat the oven to 190°C (375°F) and lightly grease a medium baking pan.
2️⃣ In a large bowl, mix the oats, flaxseed meal, cinnamon, ginger, nutmeg, and baking powder.
3️⃣ In another bowl, mix the plant-based milk, applesauce, vanilla, coconut oil, and maple syrup until a smooth base forms.
4️⃣ Pour the liquids over the dry ingredients and mix gently.
5️⃣ Add some of the apples, walnuts, and raisins, reserving some to garnish on top.
6️⃣ Transfer the mixture to the baking dish and top with the remaining apples, walnuts, and coconut sugar.
7️⃣ Bake for about 40 to 50 minutes. For a creamier texture, remove when the center is still slightly moist. For a firmer version, let it brown a little longer.
8️⃣ Let it cool for at least 30 minutes before serving. This helps the structure to firm up and intensifies the creaminess.
Serving suggestions:

🔸Sprinkled with cinnamon
🔸Heated plant-based milk
🔸Fresh fruit on top
